A UK workplace client needed trained grill and serving staff to run a BBQ, rather than a full catering package. The requirement was people who could take the whole cook and service off the internal team.

Why does a two-person grill deployment need planning?
Live cooking in a workplace outdoor space carries real risk — heat, fuel, raw and cooked separation, allergens and a crowd standing close to an open grill. With a two-person crew there is no specialist for each part of it, so the same people are cooking, serving, managing the queue and holding the hygiene discipline simultaneously. That only works if the roles and the sequence are decided beforehand: who owns the grill, who owns service, how the raw-to-cooked flow runs, and what the queue does while a batch cooks. Get that wrong and the crew ends up cooking in bursts with a queue in front of them, which is uncomfortable for everyone and where hygiene shortcuts start.
The operating context
Workplace outdoor space means no kitchen, weather exposure, limited water, and a grill that has to be sited away from the building, doorways and anything flammable. Guests are colleagues who will stand next to the cooking. Everything comes in and goes out on the day, including fuel and waste. The client's own team are guests, not staff — which was the entire point of the brief.
